Orange Tofu? Chickenless Orange Chicken? Chinese-Style Tofu?

We might not know what it's called, but we know it tastes great!

Ingredients:
 - 3 tablespoons olive oil
 - 1 block extra firm tofu, drained and pressed
 - 2 garlic cloves, minced
 - 2 green onions, chopped
 - 1/4 cup and 3 tablespoons water
 - 1 tablespoon orange juice
 - 1 tablespoon lemon juice
 - 1 1/2 tablespoons vinegar
 - 2 tablespoons soy sauce
 - 1/4 cup packed brown sugar
 - 1/2 teaspoon red pepper flakes
 - 2 teaspoons corn starch
 - hot cooked rice (Minute rice is what we used.)

Directions:
 1. Cut the tofu into bite-sized pieces, and saute in 2 tablespoons of olive oil.








2. Meanwhile, saute the garlic and green onions in remaining tablespoon of olive oil until the garlic is brown. Then add water, orange juice, lemon juice, vinegar, soy sauce, and pepper flakes. Bring that to a boil and reduce heat to medium.

3. In a small dish, mix corn starch and water until thoroughly blended. Pour the corn starch mixture into the sauce, and cook, stirring, until it's as thick as you like.

4. Combine sauce and tofu, and serve over rice!







This recipe says it serves about 2, but we doubled it and it was enough for the five of us. It took us about a half hour to finish, but we're a bit slow :) Enjoy!

Introduction

Hello! I guess we'll start by introducing ourselves. We're a group of teenagers from a small town in Michigan who want to explore vegetarian cuisine - and have taken it upon ourselves to discover  delicious and easy, meat-free meals.
The motivation for choosing vegetarianism is different for everyone, even within our group. It's certain that vegetarianism is good for your health and the environment. Vegetarian food can be a new experience, and it's often suprisingly delicious. Our mission: to prove it!
We'll share recipes, photos, tips that we probably would have found helpful, and feedback on the recipes. And if you ever have any suggestions, we're always ready to try them. 
We're beginning bloggers, so any help or advice would be appreciated. ;)
We're no Emeril Lagasse but we'll give it our best shot! BAM!
